Main Course: Mushroom Bowtie Pasta

Ingredients
- 1 package (About 400 grams) bowtie pasta or any other type of pasta
- 2 tablespoons non-hydrogenated margarine
- 2 medium or 1 large onion, sliced
- 1 - 2 packages (About 200 grams each) mushrooms, sliced (use 2 packages for a meatier flavour)
- 2 cloves fresh garlic, minced or 1 teaspoon garlic powder
- 2 ½ cups chicken broth or 3 cups water + 2 teaspoons instant chicken bouillon powder
- 2 tablespoons flour
- ½ teaspoon dried herbs like thyme, sage, parsley (add more to taste)
- 1 ½ cups feta cheese, crumbled or any other type of shredded cheese
Directions for Preparation
- Cook pasta according to package directions and drain.
- In a large pot, heat the margarine and onions on medium high. Cook until soft, about 10 minutes.
- Add the mushrooms, garlic and seasonings. Cook for a few minutes, just until the mushrooms start to brown.
- Slowly add the broth or water and flour stirring continually to avoid lumps.
- Cook for about 2 minutes or until the sauce thickens.
- Add pasta to the sauce and toss to coat.
- Remove from heat and gently stir in the cheese. Let sit with the lid on the pot for a few minutes before serving.
