Main Course: Pineapple Pork

Ingredients
- 2 onions, chopped
- 4-6 garlic cloves, roughly chopped or 2 teaspoons garlic powder
- 2 pounds pork stew cubes or diced pork shoulder, trimmed of fat and gristle
- 1 can (540 mL) pineapple tidbits
- 2 cups frozen vegetable mix or fresh chopped vegetables like carrots and peppers
- 2 tablespoons white vinegar
- 2 tablespoons soy sauce, preferably low sodium
- ½ teaspoon black pepper
Directions for Preparation
- In a large pot, fry the onion, the garlic and the pork together until browned.
- Add the rest of the ingredients.
- Bring up to a boil, lower the heat and cover.
- Cook for about 60 minutes.
- Add more pepper or garlic pepper to taste.
Serve over rice or quinoa.
