Snack: Wholesome Rice Krispy Treats

Ingredients

A healthier, wholesome take on the classic cereal treat! Try it for your holiday baking this year.

  • ΒΌ cup + 2 tablespoons butter or non-hydrogenated margarine
  • 1 bag (About 400 grams) mini marshmallows, divided
  • 1 teaspoon vanilla extract
  • 4 cups rice crisp cereal
  • 2 cups bran buds or bran flakes

Directions for Preparation

  1. Grease a 9-inch square baking dish. Set aside.
  2. In a large pot, melt butter or margarine over medium heat.
  3. Once melted, add in all but 1 cup of the marshmallows. Reduce heat to low and continue stirring until completely melted.
  4. Remove from heat and stir in the vanilla. Add the cereal and the remaining marshmallows.
  5. Pour into the prepared baking dish.
  6. Press gently with your fingertips just until completely spread out.
  7. Allow to set for about an hour.
  8. Cut and enjoy.
