Dessert: Raisin Scones
Servings: 12 scones
Preparation time: 20-25 minutes
Cooking time: 10 minutes
Ingredients
These are just like the scones granny made but cut into smaller wedges.
- ½ cup milk (preferably canned evaporated milk)
- 1 egg
- 1 ½ cups flour
- ¼ cup sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- ½ cup raisins
- ½ cup cold butter, grated using a cheese grater
- 1 ½ cups plain oats
- 1 teaspoon sugar (for the top of the scones)
Directions for Preparation
- Preheat the oven to 350°F. Grease a baking sheet.
- In a medium-size bowl, stir in the egg and milk.
- In a large bowl, mix together the flour, sugar, baking powder, cinnamon and raisins.
- Into that same large bowl, add the grated butter and most of the egg/milk mixture. Save a little bit of the egg/milk mixture to brush the top of the scones.
- Stir everything together with a large spoon until it forms a dough ball.
- Place the dough ball onto the baking sheet.
- Pat the dough ball down to spread the mixture into an 8-to-10-inch circle (like the size of a small pizza).
- Cut into 12 small wedges but do not separate the wedges.
- Brush the top with reserved egg/milk mixture, then sprinkle with 1 teaspoon sugar.
- Bake for 15-20 minutes or until lightly browned and firm to touch.
- Cool for 10 minutes, then slice again to separate the 12 wedges. Enjoy!
