Ingredients
- 1 bag (500 gram) frozen California mixed vegetables
- 1 medium onion, finely chopped or 1 teaspoon onion powder
- 1 cup mayonnaise
- 1 cup shredded cheese
- 1 cup crushed Ritz crackers or soda crackers
Directions for Preparation
- Boil the vegetables until heated through. Drain well. This step can be done ahead of time.
- Preheat the oven to 350 ° F. Grease a medium-size baking dish.
- In a large bowl, mix the onion, the vegetables, the mayonnaise, and half of the shredded cheese.
- Spread the vegetables mixture evenly into the casserole dish.
- In a medium bowl, stir together the leftover shredded cheese and the crushed cracker crumbs.
