Main Course: Hearty Ham and Bean Stew

Ingredients
- 1 onion, finely chopped
- 1 celery rib, chopped (optional)
- 1 carrot, chopped
- 2 medium potatoes, peeled and cubed
- 2 cans (398 mL each) baked beans, any flavour
- 1 cup cubed fully cooked ham or 1 package (about 375 grams) ham deli meat, cubed
- 1/2 cup water
- Pepper to taste
- Shredded cheese to top individual bowls of stew (optional)
Directions for Preparation
- Drain some of the liquid from the canned beans.
- Place everything in a large pot and bring to a low boil.
- Cook stirring occasionally until the potatoes are soft. Add more water if needed. Season with pepper to taste.
- Optional: Sprinkle bowls of stew with shredded cheese.
