1 can (540 mL) canned pumpkin pie filling
4 eggs
1 teaspoon vanilla
2 cups (250g) all-purpose flour
1 tablespoon baking powder
Directions for Preparation
- Preheat the oven to 350 °F.
- In a large bowl, blend the first 3 ingredients with a hand blender until smooth.
- Stir in the flour and the baking powder.
- Blend the mixture using the hand blender for 3 minutes.
- Pour into a greased loaf pan or Bundt cake pan.
- Cook for 60 minutes, then turn off the oven.
- Leave the cake in the warm oven to finish cooking until the oven cools down. This will help cook the middle of the cake while not over-browning the edges.
- Once cool, sprinkle with icing sugar.
