Dessert: Pumpkin Spice Holiday Cake

Servings: 1 large loaf or 1 small Bundt cake

Ingredients

You are 5 ingredients away from a moist and festive holiday cake that you can top with a sprinkle of icing sugar for a little more sweetness.

1 can (540 mL) canned pumpkin pie filling

4 eggs

1 teaspoon vanilla

2 cups (250g) all-purpose flour 

1 tablespoon baking powder

Directions for Preparation

  1. Preheat the oven to 350 °F.
  2. In a large bowl, blend the first 3 ingredients with a hand blender until smooth.
  3. Stir in the flour and the baking powder.
  4. Blend the mixture using the hand blender for 3 minutes.
  5. Pour into a greased loaf pan or Bundt cake pan.
  6. Cook for 60 minutes, then turn off the oven.
  7. Leave the cake in the warm oven to finish cooking until the oven cools down. This will help cook the middle of the cake while not over-browning the edges.
  8. Once cool, sprinkle with icing sugar.
