Main Course: Teriyaki Protein Bowls

Ingredients
This recipe will quickly become a new family favorite! In this one pot recipe, chicken or pork are stewed in a deliciously flavorful sauce spooned on top of rice.
- 8 chicken pieces (thigh or drumsticks), skin removed or 4 pork chops cut in half, trimmed of fat
- 1 cup any jarred rib or stir-fry sauce
- 3 cups frozen or fresh chopped vegetables, any type
- 2 teaspoons corn starch or 1 tablespoon flour
- Sliced green onion and roasted peanuts (optional)
Directions for Preparation
- In a large pot, add the meat, the sauce and the frozen vegetables.
- Bring up to a low boil and cover with a lid.
- Cook for 20 minutes.
- Meanwhile, in a small bowl, stir together the corn starch or flour with 2 tablespoons of water until it is a smooth paste.
- After 20 minutes, remove the meat from the pot and set aside.
- To the same pot, slowly add the corn starch/flour mixture stirring constantly until thickened. If the sauce is not thick enough, add more corn/starch flour mixture.
- Once the sauce is to the desired thickness, place the meat back into the pot and cook for another 2-3 minutes.
- Serve each piece of meat over a bed of hot rice or quinoa with sauce spooned on top. Optional to top with sliced green onion and roasted peanuts.
