- 2 tablespoons vegetable oil
- 8 pieces of chicken, skin removed
- 4 garlic cloves, chopped
- 1 teaspoons dried Italian seasoning or basil or oregano or thyme
- Chili flakes (optional)
- 1 cup canned diced tomatoes, juice drained away
- ½ cup water or chicken broth
- 1 cup evaporated milk
- ½ cup parmesan cheese

- Preheat oven to 375° degrees. Grease a large baking dish.
- In a large frying pan, heat 1 tablespoon of the oil over medium-high heat.
- Add the chicken pieces to the pan, flip when golden brown, about 4-5 minutes per side. Transfer the chicken to the baking dish.
- In the same skillet, heat the remaining oil on medium heat. Add the garlic, the seasoning, and the chili flakes (optional). Cook stirring constantly for 1 minute.
- Stir in the tomatoes, chicken broth or water and the evaporated milk. Cook for 5 minutes, stirring often.
- Pour the sauce over the chicken then sprinkle with parmesan cheese.
- Cover with aluminum foil and bake for 30minutes. Remove foil and let sit for 10 minutes before serving.
