Ingredients

  • 2 tablespoons vegetable oil 
  • 8 pieces of chicken, skin removed
  • 4 garlic cloves, chopped
  • 1 teaspoons dried Italian seasoning or basil or oregano or thyme
  • Chili flakes (optional)
  • 1 cup canned diced tomatoes, juice drained away
  • ½ cup water or chicken broth
  • 1 cup evaporated milk
  • ½ cup parmesan cheese

  1. Preheat oven to 375° degrees.  Grease a large baking dish. 
  2. In a large frying pan, heat 1 tablespoon of the oil over medium-high heat.  
  3. Add the chicken pieces to the pan, flip when golden brown, about 4-5 minutes per side.  Transfer the chicken to the baking dish. 
  4. In the same skillet, heat the remaining oil on medium heat. Add the garlic, the seasoning, and the chili flakes (optional). Cook stirring constantly for 1 minute. 
  5. Stir in the tomatoes, chicken broth or water and the evaporated milk. Cook for 5 minutes, stirring often.  
  6. Pour the sauce over the chicken then sprinkle with parmesan cheese. 
  7. Cover with aluminum foil and bake for 30minutes.  Remove foil and let sit for 10 minutes before serving.
