Ingredients
- 2 ¼ cups fresh or frozen berries
- ½ cup sugar
- 1 tbsp. lemon or orange juice
- pinch of salt
- 24 ice cream sandwiches
- 2 tubs (About 1 L) frozen dessert whip, thawed
Directions for Preparation
Berry Sauce
- If using fresh berries, wash before using. Place the berries in a medium saucepan, add sugar, juice, and salt. Stir until combined.
- Bring berry mixture to a boil.
- If using fresh berries, boil a full minute. If using frozen berries, boil for 3- 5 minutes. Let cool before assembling cake.
Cake
- Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch dish.
- Top with a layer of whipped topping, then top with ½ cup berry sauce.
- Repeat layering with remaining ice cream sandwiches, whipped topping, and another ½ cup berry sauce.
- Cover the dish with aluminum foil and freeze until set, about 30 minutes.
- Cut the cake into 12 squares and serve. Top each serving with more berry sauce.
