Salad: Creamy Corn Salad

Ingredients
This super easy side dish tastes great with anything grilled. This recipe can easily be doubled.
- 5 cups frozen corn
- 1 green pepper, diced (optional)
- ½ cup shredded cheese
- ½ cup sour cream or plain yogurt
- ½ to 1 teaspoon sugar (adjust to your taste)
- ½ cup mayonnaise
- Salt and pepper to taste
Directions for Preparation
- Place the frozen corn kernels in a pasta strainer. Run warm water over the kernels until thawed. Drain well.
- In a medium bowl, stir together the corn and the green pepper.
- In a separate bowl whisk together the rest of the ingredients.
- Refrigerate until ready to serve.
- Stir in the mayonnaise sauce into the corn and serve right away.
