Salad: Steak Fajita Salad Bowl

Ingredients
This is the perfect lunch to makeover leftover steak.
- 2 cups cooked rice or quinoa
- 1 leftover steak, chopped or sliced
- 1 head romaine lettuce, chopped
- 1 tomato, diced (optional)
- 1 green pepper, diced (optional)
- 1 ripe avocado, diced (optional)
- 3 tablespoons lemon or lime juice
- 3 tablespoons olive oil
- ¼ teaspoon garlic powder
- 1 teaspoon honey or maple syrup or brown sugar
- 1 – 2 teaspoons taco seasoning (adjust to your liking)
Directions for Preparation
- Place the cooked rice or quinoa in a large bowl.
- Top with vegetables, then the steak.
- Drizzle on the dressing.
- Eat right away. Enjoy!
