Salad: Steak Fajita Salad Bowl

Ingredients

This is the perfect lunch to makeover leftover steak.

  • 2 cups cooked rice or quinoa
  • 1 leftover steak, chopped or sliced
  • 1 head romaine lettuce, chopped
  • 1 tomato, diced (optional)
  • 1 green pepper, diced (optional)
  • 1 ripe avocado, diced (optional)
  • 3 tablespoons lemon or lime juice
  • 3 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • 1 teaspoon honey or maple syrup or brown sugar
  • 1 – 2 teaspoons taco seasoning (adjust to your liking)

Directions for Preparation

  1. Place the cooked rice or quinoa in a large bowl.
  2. Top with vegetables, then the steak.
  3. Drizzle on the dressing.
  4. Eat right away. Enjoy!
