Ingredients
- 2 cups oats
- 1 cup all-purpose flour
- ¾ cup sugar, white or brown
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg, ¼ teaspoon ground ginger, ⅛ teaspoon ground cloves (optional)
- ½ teaspoon salt
- ½ cup vegetable oil
- 3 eggs
- 1 cup carrots, shredded then chopped into smaller shreds
- 1 teaspoon vanilla
Directions for Preparation
- In a large mixing bowl, mix the dry ingredients: oats, flour, sugar, baking powder spices and salt.
- In a medium mixing bowl, stir together the rest of the ingredients.
- Combine wet ingredients with dry ingredients and stir until well incorporated.
- Let chill in the fridge at least 30 minutes.
- Preheat the oven to 350 °F.
- Grease a cookie sheet or line with parchment paper or aluminum foil.
- Scoop a heaping tablespoon of batter on the cookie sheet. Pat down with the back of the spoon to flatten just a little.
- Place cookies 2 inches apart on the sheet. Repeat with the leftover batter.
- Bake for 20 minutes. Store in the covered container in the fridge.
