Snack: Sweet and Sour Cauliflower Bites

Ingredients
Sticky and sweet, these cauliflower bites are a delicious twist on classic sweet & sour chicken or pork. Serve on its own as a snack or serve as a meal over rice or quinoa. To save time, use jarred sweet and sour sauce.
Cauliflower
- 1 large cauliflower head (about 8 cups) washed then cut into florets
- 3 tablespoons vegetable oil
- ⅓ cup corn starch
- 1-2 green onions, thinly sliced & 1 teaspoon sesame seeds (optional for garnish)
Sauce
- ¼ cup + 1 tablespoon sugar
- ½ cup vinegar
- 2 tablespoons soy sauce
- ½ teaspoon garlic powder
- ¼ cup ketchup
- 1 tablespoon cornstarch + 2 tablespoon cold water
Directions for Preparation
- Preheat oven to 425° degrees and line a baking sheet with aluminum foil or parchment paper. Grease with vegetable oil.
- In a large bowl, toss the cauliflower in oil. When coated, add the corn starch, and toss until coated.
- Spread out the cauliflower onto the greased pan.
- Bake for 15-20 minutes until the cauliflower starts to brown on the bottoms. Switch oven to broil and cook on high for 3-4 minutes. Watch carefully, it can burn quickly.
- While cauliflower is cooking, make the sauce. In a small saucepan, stir together the sauce ingredients except the cornstarch and water.
- Bring up to a low boil, stirring constantly. In a small bowl, whisk together the 1 tablespoon corn starch and cold water until smooth.
- Slowly add the cornstarch paste to the saucepan. Stir continuously until thickened. Turn off the heat.
- In the same large bowl, toss together the sauced and the cauliflower. Transfer back to the baking sheet to keep it crispy.
