Main Course: Tuna Quesadilla Melts

Ingredients
These easy tuna quesadilla melts are quick and delicious. They are a perfect meal for busy weeknights or for a quick lunch.
- 2 cans (170 grams) tuna, drained
- ¼ cup tomato salsa
- ¼ cup mayonnaise
- 1 small pepper, chopped finely OR 2 celery ribs, chopped finely (optional) OR ½ cup canned corn, drained
- ¼ cup onion, chopped finely OR 2 green onions, sliced (optional)
- ¾ cup shredded cheddar cheese
- 1-2 cups baby spinach leaves, washed (optional)
- 8 medium tortillas or 4 large tortillas, preferably whole wheat
Directions for Preparation
- The mash the tuna into the salsa until well combined.
- Stir in the mayonnaise, the chopped vegetables (optional) and the shredded cheese until combined.
- On a tortilla, spread out a portion of the tuna mixture. Top with spinach leaves (optional). Top with a tortilla.
- Repeat for the rest of the tortillas.
- Lightly grease a non-stick skillet and warm on low to medium heat. Add a quesadilla. Flip when golden brown.
- Remove from pan once both sides are golden brown.
- Cut into wedges and serve.
