Ingredients
This one-pot meal is loaded with ground beef, beans, corn, and cheese. Design your own bowl with fun toppings.
- 1-pound lean ground beef or any ground meat
- 3 garlic cloves, minced or ½ teaspoon garlic powder
- 1 medium onion, chopped
- 1 sweet pepper, chopped
- 1 can (796 mL) diced tomatoes, preferably no salt added
- 1 packet (24 grams) store-bought taco seasoning
- 1 can (about 500 mL) kidney beans, rinsed and drained
- 1 can (342 mL) corn niblets, drained
- 2 cups beef broth or water
Top soup with fun toppings like: shredded cheese, diced avocado, guacamole, sour cream, chopped green onion, and crushed tortilla chips.
Directions for Preparation
- In a large pot, add the meat, vegetable oil, onions, garlic and sweet pepper. Cook on medium heat breaking up the meat as it cooks.
- Once the meat is browned, add the rest of the ingredients. Bring up to a low boil and cover with a lid.
- Let cook for 20 minutes.
- Serve the stew piping hot with your chosen toppings. Can also serve over cooked rice or noodles for a balanced meal.
