Loaded Baked Potato Salad is a classic potato salad recipe with a twist. All your favorite baked potato flavors like bacon, cheddar cheese and sour cream make this a perfect side dish!

· 8 medium potatoes, peeled and diced
· ½ cup mayonnaise, preferably low fat
· ½ cup sour cream or plain yogurt
· 1 teaspoon mustard, preferably Dijon
· ½ cup shredded cheese
· ¼ cup slices green onions
· ¼ cup bacon bits

- Wash the potatoes well and cut out any dark spots or bruises. Place in a large pot and cover with water.
- Bring up to a boil. Cook for 8 to 10 minutes or until the potatoes are cooked but not yet soft.
- Dunk in cold water. Leave the potatoes sitting in the cold water while you prepare the other ingredients. The longer you let the potatoes sit, the better.
- In a large bowl, stir the other ingredients until combined.
- Lastly, drain the potatoes well. Toss into the bowl.
- Stir gently until coated with the sauce. Keep refrigerated until ready to serve.
For a lighter dish, use light sour cream or plain yogurt instead of regular sour cream.
