Ingredients
Pork Adobo is a dish from the Philippines that uses simple ingredients that creates tender, flavourful chunks of meat in gravy served with rice and vegetables. This is a weekend dish that tastes better the next day for leftovers.
- 1 tablespoon vegetable oil
- 2 pounds pork shoulder, cut into 1” chunks
- ¼ cup vinegar
- ⅓ cup soy sauce, preferably low sodium
- 2 cloves garlic (chopped)
- 4 bay leaves
- 2 teaspoons black peppercorns or 1 teaspoon ground black pepper
- 1 teaspoon brown sugar
- 2 cups water
Directions for Preparation
- In a large pot over medium high heat, add the oil and sear the pork until browned on all sides. If there is a bone, add it to the pot.
- Add the rest of the ingredients. Bring to a boil. Reduce the heat to medium low, cover, and simmer for 1 hour.
- Remove the cover and continue simmering for another 30 minutes to reduce the sauce.
- Taste the sauce, add more sugar or vinegar based on your taste.
- Serve over rice with a side of vegetables.
