Ingredients
A smash burger is a burger that is made by smashing the ground beef onto the hot cast iron pan with a spatula. Smashing the burger causes the edges to be crispy but locks the juices inside the burger.
Ingredients
· 2 tablespoons vegetable oil
· 2 onions, thinly sliced
· 1 package (227 grams) mushrooms, sliced or roughly chopped
· 1 pound (454 grams) cold ground beef
· Salt and pepper
· 1 cup shredded cheese
· 4 buns
Directions for Preparation
- In a large frying pan, heat the oil on medium heat. Add the onion, cook stirring often until the onion is softened.
- Add the mushroom and cook on high until just heated through.
- Do not overcook the mushrooms or they will be soggy.
- Meanwhile, make 8, eight even-sized, loose meatballs. Do not pack the meat tightly.
- Heat up a cast iron pan on high heat. Once hot, place meatballs onto the hot surface. Do not crowd the meatballs. They will be pressed down and should not touch each other.
- Place a piece of aluminum foil onto each meatball and smash down to a ¼” inch thickness using a sturdy spatula.
- Sprinkle with salt and pepper. Grill for about 60 seconds, until the edges are dark brown. Using the sturdy spatula, gently flip over.
- Cook for an additional 60 seconds then cover every second patty with cheese.
- Stack a patty with cheese with another patty without cheese onto a bun.
- Top with the onion and mushroom mixture.
