Main Course: Stuffing Breakfast Casserole

Ingredients
Comforting and easy. Secret ingredient, boxed stuffing!
- 1 box turkey stuffing mix
- 2 cups frozen homefries (choose the little chopped homefries)
- 4 cups bread (preferably whole wheat), ripped into pieces
- 1 onion, finely chopped
- 2 green peppers, chopped or 2 zucchinis, grated
- 1 ½ cups cubed ham, or chopped pre-cooked sausage or ½ cup crumbled bacon, or leftover cooked turkey or chicken
- 1-2 cups milk
- 8 eggs, beaten
- 1 ½ cup shredded cheese
- 1-2 packages (about 25 grams) dry turkey gravy mix (use 2 if your family likes a lot of gravy)
Directions for Preparation
- Preheat oven to 400 ° F. Lightly grease a 9” x 13” baking dish.
- In a large mixing bowl, mix all the first six (6) ingredients.
- In a medium bowl, whip the eggs together with the milk.
- Pour the milk and egg mixture into the other bowl. Stir until all the items wet.
- Pour the mixture into the baking dish and sprinkle with the cheese.
- Cover with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for another 15 to 30 minutes or until a knife inserted into the middle comes out clean. Cut into 10 portions.
- Meanwhile, make the turkey gravy according to the package directions. Serve the gravy on the side.
