Dessert: Blueberry Buckle Cake

The absolute best blueberry cake that has just a hint of sweetness.
Ingredients
- ¼ cup vegetable oil
- 2 eggs
- ¾ cup milk
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- ¼ cup white sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 cups fresh blueberries or thawed frozen blueberries
Topping
- ¼ cup butter or non-hydrogenated margarine, room temperature
- ¼ cup white sugar
- ¼ cup all-purpose flour
- ½ cup plain oats
- ½ teaspoon ground cinnamon
Directions for Preparation
- Lightly grease a 8” x 8” baking dish. Preheat oven to 350° F.
- In a medium size bowl, using a hand blender, blend the first four (4) ingredients until combined.
- Stir in the flour, sugar, baking powder and salt. Blend for 1 minute. Stir in the blueberries. Note: if using thawed frozen blueberries, drain the blueberry juice before adding them to the bowl.
- In another medium bowl, combine the rest of the ingredient. It will be crumbly.
- Using your hands, sprinkle the topping over the cake.
- Bake for 35-45 minutes or until a knife inserted into the centre comes out clean.
- Serve with vanilla yogurt, whipped cream, or ice cream.
