Salad: Crispy Chicken Salad

Ingredients
This makes a huge crispy chicken salad is packed with all your favorites and topped with creamy ranch dressing.
- ½ box (600 grams) Best Value breaded chicken
- 2 heads lettuce, washed and roughly chopped
- 4 large eggs hardboiled, then sliced
- 1 cup cherry or grape tomatoes, washed then halved
- ¼ onion, thinly slices or 3 green onions, chopped
- 1 medium avocado, sliced (optional)
- ½ cup ranch dressing
- 1 tablespoon lemon juice
- Chili flakes, optional
Directions for Preparation
- Cook chicken according to package directions. Let cool while preparing the other salad ingredients.
- Once the chicken is cool enough to touch, remove the meat from the bone and cut into bite size pieces.
- Make the dressing. In a small bowl, stir together the ranch dressing, lemon juice and optional chili flakes.
- Assemble the salad by placing the lettuce in a large bowl or platter dish.
- Top with the rest of the toppings leaving the chicken last.
- Drizzle with dressing and serve.
